For a tasty start to the New Year, I decided to slice and grill some ripe red tomatoes for breakfast. I could have had them just as they were, but grilling them seems to bring out a certain sweetness with the added opportunity to add flavours such as herbs, chillies and seasoning.
So here I have simply sliced the tomatoes and arranged them in a shallow pan. I drizzled a little olive oil and sprinkled some dried oregano and a little unrefined brown sugar. A pinch of salt and pepper just to finish off and under a preheated medium grill for 10 minutes. Do keep an eye while grilling and take it as far as you’d like them grilled.
For my breakfast this morning, I have paired them up with a mushroom omelette in warmed pitta pockets …yum, a delicious start to the New Year!
